KA: Simple Aglio Olio


Nothing beats Aglio Olio. This dish is really easy to make and it only requires a few ingredients. This recipe can be really simple or it can be really fanciful with additional toppings (bacon/ham bits,   roasted tomatoes, sauteed mushrooms or butter prawns).


Ingredients (Serves 2):
1. 5 cloves of garlic, chopped/sliced. I prefer chopped
2. 2-3 small chili (optional but it will taste really good!)
3. Sufficient extra virgin olive oil
4. salt and black pepper to taste
5. Spaghetti of your choice 



I put quite a lot of garlic because I like it really flavourful. I don't usually measure how much oil I need because it is way too troublesome. I put more instead. You don't want dry spaghetti right? You can use the leftover oil to stir fry some vegs. 



Instructions:

Spaghetti
1.  Boil the spaghetti in a wok of salted water until it softens. 

2. Drain and lightly rinse with cold water. 



Sauce
1. Peel, wash and dry the garlic cloves. Chop/slice as per your preference. Slice the chili into small pieces. Remember to get rid of the seeds if not it will be really spicy. 

2. Pour sufficient amount of oil into the pan. Drop in all your garlic and chili before starting your fire. 

3. Let your garlic slowly roast in the oil. Add a bit of salt and pepper. The fragrance of the garlic will slowly infuse into the oil. 

4. Turn off the stove when the garlic turns nice and golden. 
*PS, it will smell really good by now*

5. Toss the cooked spaghetti into the olive oil and mix them evenly. Add more salt and pepper if required.

6. Drain the aglio olio to get rid of the extra oil. (If you used more oil like what I always do)



7. Throw in your cheese, ham bits and whatnot if you want. If you're lazy, skip everything except the cheese. Cheese is a must for aglio olio.
